Chewy Oat & Raisin Cookies

Soft, chewy cookies with a hint of cinnamon. A lunchbox classic.

Ingredients

  • 125 g soft butter
  • 150 g light brown sugar
  • 1 egg
  • 150 g rolled oats
  • 125 g plain flour
  • ½ tsp bicarbonate of soda ½ tsp bicarbonate of soda
  • 1 tsp ground cinnamon
  • 100 g raisins

Method

  1. Cream. Beat the butter and sugar until fluffy, then beat in the egg.
  2. Mix. Stir in the oats, flour, bicarb, cinnamon and raisins.
  3. Shape. Roll into 18 balls and space well apart on two lined trays. Flatten slightly.
  4. Bake. Bake at 180°C (160°C fan) for 12 minutes. Cool on the tray for 5 minutes.

Chef tip

They look underdone when they come out. They firm up as they cool.

Storage

Keeps 5 days in a tin.

Swap it

Use dried cranberries or chopped dark chocolate.
