No-Yeast Soda Bread

Ingredients
- 250 g plain white flour
- 250 g wholemeal flour
- 1 tsp bicarbonate of soda
- 1 tsp salt
- 400 ml buttermilk
Method
- Heat the oven. Heat the oven to 200°C (180°C fan) and dust a baking tray with flour.
- Mix. Mix the flours, bicarb and salt. Pour in the buttermilk and stir quickly into a soft, sticky dough.
- Shape. Tip onto a floured surface, shape into a round and flatten slightly. Cut a deep cross in the top.
- Bake. Bake for 35 minutes until it sounds hollow when tapped underneath. Cool on a rack.
Chef tip
Work fast once the buttermilk goes in; the rising starts straight away.
Storage
Best on the day. Toast it on day two.
Swap it
No buttermilk? Stir 1 tbsp lemon juice into 400 ml milk and leave for 5 minutes.
