Cheddar & Chive Scones
Tall, flaky savoury scones with sharp cheddar. Best warm with butter.

Ingredients
- 350 g self-raising flour
- 1 tsp baking powder
- 85 g cold butter, cubed
- 100 g mature cheddar, grated
- 2 tbsp chives, snipped
- 175 ml milk, plus extra to glaze
Method
- Heat the oven. Heat the oven to 220°C (200°C fan) and line a baking tray.
- Rub in. Rub the butter into the flour and baking powder until it looks like breadcrumbs. Stir in most of the cheese and the chives.
- Bring together. Add the milk and mix with a knife into a soft dough. Pat out to 3 cm thick.
- Cut and bake. Cut out 8 scones, brush with milk, top with the rest of the cheese and bake for 12–15 minutes.
Chef tip
Do not roll the dough thinner than 3 cm, or the scones will be flat.
Storage
Best on the day. Freeze and warm through for 8 minutes.
Swap it
Add a pinch of smoked paprika or swap chives for spring onion.
